Portrait alex 91img 10ct finalAlexandre was born in Fleury Valley , in the Yonne.

Early captivated by the passion of bread , he started in 2006 as a baker apprentice in the bakery of Mr. LEMASSON in Appoigny . Once qualified with a "Certificate of Professional Aptitude" in Bakery, he  got trained in pastry and graduated a year later , with a "Certificate of Professional Aptitude in Pastry-Chocolatry-Ice cream-Confectioner".

Invested and motivated, Alexandre did not stop there: in 2008 he went back to Bakery and got  graduated with a " Baker Mention, with Specialty special breads ." At this moment, he joined the Etoile du Berger in Paris area, the Bakery of Mr Franck DEBIEU , where he met Coralie.

This experience increased his confidence; he got encouraged to continue his efforts. He graduated in 2010, with the “Professional Certificate in Bakery”.

The track record of Alexandre enriched with glowing titles aquired during regional, national and European competitions: Alexandre was sacred Best Young Baker of the Yonne, Burgundy and France . The quality of his work eventually qualified him for the European contest. Alexandre represented France at the European Championship in Vienna , Austria, where he obtained brilliant results: Alexandre was sacred Vice European Champion team.

During this period , Alexandre matured and his responsibility has extended: he has acquired a perfect technicality, has developed management skills, organized the production , controled the quality of products and raw materials, and started reinventing recipes.

The year of 2012 marked the return of Alexandre on his homeland, accompanied by Coralie. Alexandre continued his journey by combining technology and creativity.

Coralie and Alexandre then heard about a Bakery for sale in Gurgy. A crazy project was born in their heads! And if it was for them? After long days of reflection and preparation work, the young couple build and presented their business case for acquisition to the local authorities.

If the story of ''Aux Mains Couleur de Blé'' has started to be written in Gurgy on a saturday, the first of june of 2013, it took a new dimension four years later: indeed, it is in the heart of Monéteau (close to the northern exit of Auxerre) that Coralie and Alexandre settled in april 2017, and opened a new shop. As the saying goes, things come in threes. Aux Mains Couleur De Blé started to be short with room. Coralie and Alex looked for increasing their storage and production capabilities, while at the same time, proposing a new selling point. In septembre 2020, they opened a new shop in the heart of Appoigny.

Their story goes on, day after day. Always animated by their passion, Coralie and Alexandre have increased their team with which they continue to promoting and share their ''Petits Bonheurs de Tradition"!!!

 

Coralie CAILLET

Her Grand-Father was a baker. As a child, greedy and curious, she already engaged to the pleasures of sandy paste.

Coralie did not, however, immediately fall into a stand mixer. At 18, she joined the University of  Nice Sophia Antipolis where she began a degree in Law and Political Science. Early attracted by the international sphere, she studied abroad at the University of Law in Oklahoma, United States. Capitalizing on the richness of these experiences, Coralie came back to Paris, and began a specialization in International Law.

At the same time, she joined in parallel with his studies, one of the shops of L'Etoile du Berger, the famous Bakery of Franck DEBIEU. This is also where Coralie met Alexandre ... Already the beginning of a great adventure!

Coralie has aquired all the basics of the profession, be it commercial or logistics. Serious and enthusiastic, she climbed the ladder of reponsabilities, ensured various positions and eventually managed the sales activities for the company.

Graduated with a Master 2 of International Legal Affairs of the University Paris -Descartes , Coralie undertook new experiences within international companies. She discovered the world of business and management. This essential process will allow her later on, to open their own shop with Alexandre ...

Things do not happen by accident! Having skipped a generation, with her strong heritage, Coralie embraces the same profession as her baker of grandfather ! Passion is a long virtue!
